Vermentino di Gallura
Designation of Controlled and Guaranteed Superior Origin
Delicate and fragrant, Vermentino di Gallura DOCG Paltusa takes its name from our estate, narrating the identity of this territory and of our beloved Sardinia. A profoundly Mediterranean wine, which contains the scents of the whole island and the sea that surrounds it.
Characteristics: Straw yellow-green colored wine, the olfactory examination is full and enveloping, with notes of ripe fruit and Mediterranean aromas. Characteristics that we also find in the taste, pleasantly sapid, but fresh.
Pairings: Excellent with crustaceans, molluscs and seafood, first courses, white meats and baked fish; but also with medium-aged cheeses.

Production area: Valentino, Agro di Calangianus
Vineyards: 4 hectares, Guyot vine training, yield of 50/60 quintals/Ha, grapes deliberately thinned out at the right time
Typical climate: Mediterranean, characterized by spring and autumn rains, hot and breezy summers, with significant temperature variations
Soil: the soil skeleton and aquifers are rich, granitic and very mineral
Harvest: The grapes, having reached a slight overripeness, are harvested by hand, carefully selected and then destemmed.
Vinification: Fermentation is activated at controlled temperatures in steel silos, followed by soft pressing; the flower must ferments slowly, at 11-12° for about 20 days. Aging on the lees and frequent stirring for 6/7 months.

Vermentino di Gallura
Vermentino di Gallura DOCG Superiore macerated and unfiltered.
From plants with an average age of over 30 years, both manual and mechanical harvesting and refinement, in tanks, which can last even months (depending on the progress of the harvest), a wine is born capable of offering a unique and original cross-section of the territory, oscillating pleasantly between elegance, aromas and an unparalleled flavor.
A wine that represents this area of Sardinia in an exemplary way: here the rows of Vermentino are beaten by the winds and caressed by sea currents, rich in salt, as well as having their roots in a deeply calcareous soil which gives the wine a simply special character.
Shiny and alluring golden yellow colour, it shows a distinctly marine aromatic profile with splashes of iodine and algae, then delicate citrus notes of cedar and bergamot, all expressed with a particular aristocracy. When tasted, a solid structure balances the lively freshness, embracing the palate with a comforting softness that gives a sensation of complexity. A decidedly (and rightly) savory finish, framed by copious citrus notes.
Vinification: after careful selection in the vineyard and in the cellar, the grapes are destemmed and refrigerated for a few days at a temperature below zero, on the third day the fermentation begins which continues for 9 days in contact with the skins at a constant temperature of 18 degrees.
After alcoholic fermentation, the wine is left to rest in steel for 9 months.
Characteristics: shades of golden yellow present this macerate, shades that accompany the first olfactory sensations of citrus notes of cedar and Mediterranean scrub.
On the palate we find all the structure expected from a macerate, well balanced with the acidity and minerality that characterizes Vermentini from Gallura.
Citrus and slightly bitter finish, typical of Vermentino.
Pairings: wine that accompanies the entire meal, from white to red meats.

100% pure Nebbiolo grapes, Frati Gherra is the red wine of Tenuta Paltusa. Full-bodied and structured, with a ruby red colour. Its organoleptic properties accompany us in the land of high Gallura, with aromas of wild herbs and berries.
Characteristics: Ruby red colored wine. The great structure and the important tannins give this red great perspective on the nose and on the palate, characterized by complexity, persistence and good longevity.
Pairings: Excellent with medium-aged cheeses, cured meats, red meat

Soil: Granitic, mineral, rich in skeleton and aquifers. Good permeability and porosity, high potassium content.
Harvest: Once the grapes have reached maturity, they are selected and harvested by hand, pressed and left to macerate on the skins.

Vinification: after careful selection in the vineyard and in the cellar, soft pressing with destemming and skin maceration for approximately 15 days at a temperature of 28°C. After alcoholic fermentation, the wine is left to rest in steel for a few weeks, then it is transferred to wood for refinement and malolactic fermentation.
Aging: in French oak barrels for 36 months, in bottle for 9-12 months.
Characteristics: ruby red with garnet reflections. On the nose, it stands out for an intense and fruity aroma with sweet notes of plums, sour cherries, blood orange juice and spicy hints of myrtle, juniper and incense. Full and powerful body. Soft and smooth tannins are well integrated with a marked acidity.
Pairings: to try with structured dishes such as meat stew, mixed grill and mature cheeses.
